Jess has spent thirty years learning the language of flowers, the last fifteen of them at Stones of the Yarra Valley — where she has built Sassafras Flower Design into one of Australia's most distinctive wedding floral studios.
Sassafras creates floral environments that are abundant, textural and spatially considered. Jess thinks in scale and structure: suspended ceremony installations, engineered tablescapes, botanical moments that guests feel before they understand. Every commission is built from scratch, shaped by the season, the space and the couple's vision.
Environmental responsibility is non-negotiable. Sassafras has never used floral foam, and every event closes with floral gifting — flowers going home with guests rather than going to waste.
At Stones, fifteen years in a single venue produces something rare: an instinctive knowledge of how light moves through the Chapel, how the Barn responds to scale, and exactly how far to push a design to make it unforgettable.
